Given that I’ve been on such a holiday bend lately, and you are probably not Canadian and your mind is nowhere near the holiday, I’m giving you this sandwich idea! Now, I understand STLT doesn’t really have that much of a ring to it, but neither does VBLT. So here we are. This is a deeply satisfying sandwich, full of rich umami flavour from the deeply browned mushrooms, good chew from the smoked tofu, and the freshness from crisp lettuce and cool tomato. Maybe you don’t need me to tell you how to make a sandwich, but then again, maybe you’ve been searching for sandwich inspiration!
Smoked Tofu, Lettuce and Tomato Sandwich
Serves 2
1 teaspoon canola oil (or other neutral oil)
4 oz button mushrooms, sliced
Pinch of salt and dried thyme
1/2 teaspoon balsamic vinegar
4 slices bread, your choice
4 slices smoked tofu, quickly fried on each side
Veganaise and mustard, to your taste
Fresh lettuce leaves
Fresh tomato slices
Freshly cracked black pepper, to taste
Heat canola oil in a skillet, over medium-high heat, and add the mushroom slices. Don’t overcrowd the pan, add the mushrooms in batches, if needed. Also be sure to add the salt after they’re browned. Let brown, stir and sprinkle with salt. Add the vinegar and stir to combine. Remove from pan and brown each side of the smoked tofu. Spread veganaise and mustard on each side of the bread to your taste. Place the lettuce and tomato on top. Then add the mushroom and smoked tofu. Sprinkle with pepper. Serve warm or cold, with pickles or without.
